Thiamine, or vitamin B1, was the first vitamin to be found. Traditionally, brown or multi grain rice was a basic food in several Oriental states. The oils contained in the germ of whole grain rice or wheat can go rancid fairly swiftly, especially when exposed to air ( as when ground into flour ) and stored at a comfortable temperature. Thus whole grains have an a little limited shelf-life ( which can often be extended by sealing them in an airproof container and refrigerating them ).
